Easy vegan rainbow pizza

Ingredients
For the dough:
  • 300g of flour(+ a bit extra for kneading the dough)
  • 1package of instant yeast(mine was 7 g; make sure that it doesn’t need to be dissolved in water first)
  • 1teaspoon of salt
  • 1 1/2teaspoons of sugar
  • 175ml of warm water
  • 2tablespoons of olive oil(+ a bit extra for greasing the bowl)
For the toppings:
  • 3tablespoons of tomato sauce
  • 2 small red (purple) onions
  • 1 small head of broccoli
  • 5tablespoons of canned corn
  • 1 small carrot
  • 3 cherry tomatoes
Instructions
To prepare the dough:
  1. in a bowl mix together all the dry ingredients – flour, yeast, salt and sugar;
  2. in a glass mix together warm (not hot!) water and oil, then add the mixture to the dry ingredients and mix everything well together;
  3. once mixing is not possible anymore, start kneading the dough with your hands until it doesn’t stick anymore to your fingers (if necessary, gradually add a bit extra flour) and then form the dough into a ball;
  4. in a clean bowl, drizzle some oil and brush it up to the sides of the bowl, then place the dough ball in the bowl, cover the bowl with plastic wrap and put it in a warm place;
  5. let the dough rise for about 45 minutes or until doubled in size.
To prepare the toppings:
  1. cut in tiny pieces red onions, broccoli florets and cherry tomatoes, grate the carrot and drain the canned corn.
To prepare the rainbow pizza:
  1. heat the oven to 200°C/390°F;
  2. transfer the dough to a lightly floured surface and knead briefly to make it smooth;
  3. by using a rolling pin, a glass or a bottle, roll the dough into a 30 cm/12” circle, transfer the dough to your chosen pizza pan (if necessary, line it with parchment paper) and fold up the edges to form a thick crust;
  4. with a fork make several holes in the dough to avoid that the middle part raises up like a bubble;
  5. cover the dough with tomato sauce and start to place the toppings on it by creating colored circles in direction to the center – start by making the outer circle from red onions, then the next circle from broccoli florets, the next one – from corn, next again – from carrots and then create the central part from cherry tomatoes;
  6. place the pizza in preheated oven and bake for 12 – 15 minutes.

* from the indicated ingredients for dough for 1 pizza you can make 1 thick crust pizza with diameter of 27 cm/10”. From the same amount of dough, you can also make 2 small pizzas with thin crust, but be aware that the necessary amount of toppings in that case will be bigger
