Easy vegan rye cookie sticks

Ingredients
  • 250g of whole grain rye flour
  • 1teaspoon of baking powder
  • 30g of raw cane sugar(or any other sugar that you prefer)
  • 75g of roasted hazelnuts without skin
  • 75g of dark chocolate chips(make sure they’re vegan)
  • 400ml of non-dairy milk(I used soy, but you can also use any other)
  • 200g of peanut butter
Instructions
  1. heat the oven to 180°C/355°F and meanwhile mix together dry ingredients – rye flour, baking powder and sugar;
  2. chop in very tiny pieces roasted hazelnuts (or, to save time, use food processor for this step) and add them to the dry ingredients, mix well;
  3. in a microwave or water bath (bain marie) warm up peanut butter to make it more liquid and easy to mix;
  4. add non-dairy milk to the dry ingredients together with softened peanut butter. Mix well until you get a homogeneous thick dough. Then add the chocolate chips and stir them inside the dough;
  5. line a baking tray with parchment paper, fill a pastry bag with the dough – be aware that the opening of the pastry bag should be big enough to squeeze out the dough together with chocolate chips;
  6. by using the pastry bag create directly on the parchment paper cookie sticks that are around 15 cm long and as thick as your pinkie;
  7. place the baking tray in preheated oven for 20 – 25 minutes** (check notes). To make sure that the cookie sticks are ready, take them out from the oven and try to pick one cookie stick up (be careful – it’s hot). If it breaks, the cookie sticks must be baked for some extra minutes. If it’s solid, the cookie sticks are ready. Let them cool down before serving.
