Exotic flax seed pudding with kiwi and mango

Ingredients
  • 5tablespoons of ground flax seeds** (check notes)(~40 g)
  • 250ml of non-dairy milk(I used coconut and rice milk, but you can also use any other)
  • 100g of kiwi
  • 100g of mango(the indicated weight is referred only to the soft part of the fruit – do not weigh the fruit together with kernel)
  • 2tablespoons of shredded coconut
  • 1tablespoon of maple syrup(optional)
Instructions
  1. in a small bowl mix together ground flax seeds with shredded coconut. Add the non-dairy milk and mix well. (If maple syrup is being used, add it to the flax seed mixture, mix well, do some tasting and, if desired, add some extra maple syrup to adapt the sweetness of the pudding to your taste.) Put the obtained mixture in fridge for some minutes while you prepare the fruit;
  2. cut mango and peeled kiwi in small pieces;
  3. take the pudding mixture out of the fridge (at this point the ground flax seeds should have already absorbed all the liquid) and put the ingredients in layers in a mason jar or other container of your choice. First put a layer of flaxseed pudding, then a layer of mango pieces, then flaxseed pudding again, then a layer of kiwi pieces and then end it with another layer of the remaining flaxseed pudding. If desired, sprinkle some shredded coconut on top. Pudding can be consumed either immediately or put a cover on the mason jar/chosen container and place it in fridge for later or for the breakfast of next morning.

* the indicated amount of servings is adapted to people who usually have medium to big size breakfast. If you don’t eat a lot for breakfast, reduce the amount of ingredients or create multiple containers of this vegan flaxseed pudding ** if you cannot find in a shop already ground flax seeds, you can use a coffee grinder, blender, food processor or even mortar and pestle to grind the seeds on your own at home
