Healthy 10-minute vegan pasta dish with arugula and green peas

    Ingredients
    • 100g of rocket salad(known also as arugula and rucola)
    • 150g of canned or cooked green peas
    • 200g of whole-grain pasta
    • up to 5 tablespoons of water
    • salt
    Instructions
    1. boil pasta according to the instructions given on the package to reach al dente state;
    2. while pasta is cooking, put rocket salad and green peas in the food processor and blend until both ingredients have turned into small chunks. Then, by continuing to blend both ingredients with lower speed, add gradually one tablespoon of water and continue to do so until creamy consistency is reached;
    3. taste the obtained mixture and, if desired, add some salt. When the desired flavor is reached, mix the green pea and rocket mixture together with the cooked pasta.
