Healthy fennel protein salad

    • 300g of fennel(only the white part)
    • 120g of blueberries
    • 50g of walnuts(without the shell)
    • 85g of leek
    • 250g of cooked or canned red beans
    • 160g of carrots(1 big or 2 small)
    • 125g of radishes
    • 2tablespoons of extra virgin olive oil
    • 3tablespoons of lemon juice
    • 5g of parsley
    • pinch of salt and pepper
    1. place blueberries, red beans and walnuts in a big bowl;
    2. cut fennel in tiny cubes and add them in the bowl;
    3. cut carrots, radishes and leek in thin slices. By using your hands, separate the layers of leek slices, then add everything in the bowl;
    4. chop parsley in tiny pieces, place it in a small container (like a glass), add olive oil, lemon juice, salt and pepper and mix it all together;
    5. pour the obtained dressing over the salad ingredients and mix everything well together.
