Quick and easy vegan Tzatziki

Ingredients
  • 250g of unsweetened soy or coconut yoghurt(make sure that it’s really not sweet!)
  • 1clove of garlic
  • 140g of fresh cucumber
  • 2tablespoons of lemon juice
  • 1/4teaspoon of salt
  • pinch of pepper
  • 1tablespoon of extra virgin olive oil(+ a bit extra oil for decoration)
  • 1teaspoon of chopped fresh dill(optional)
Instructions
  1. in a bowl mix together vegan yoghurt and lemon juice;
  2. add crushed garlic, salt, pepper and olive oil, mix everything together;
  3. grate the cucumber, wrap it in a clean towel and squeeze out as much liquid as you can;
  4. add the grated cucumber to the yoghurt mixture and mix well;
  5. vegan Tzatziki can be eaten immediately, but for better flavor cover the bowl with plastic wrap and place it in fridge for at least 1 hour. Before serving pour a bit of olive oil on the surface of the sauce and sprinkle over chopped fresh dill.
