Vegan beetroot ice cream with chocolate pieces

    • 2 frozen bananas cut in pieces
    • 50ml of beetroot juice
    • 25g of dark vegan chocolate
    1. take out the frozen banana pieces from the freezer and let them thaw a bit in room temperature while you extract the beetroot juice;
    2. if using fresh beetroot, use a juicer to extract the beetroot juice, but if using cooked (and cooled) beetroot, grate it on a vegetable grater that has small holes and then squeeze the juice out from the beetroot pieces with your hands or with a clean towel;
    3. put the banana pieces in a powerful food processor and blend until you get a thick mixture that in consistency is very similar to ice cream;
    4. add the beetroot juice and blend it together with the blended banana until the mixture gets dark pink color;
    5. use a kitchen knife or a vegetable peeler to cut the dark chocolate in tiny pieces and mix them in the vegan ice cream. Serve immediately or place it in the freezer for later.
