Yeast-free vegan seitan pies with leek

Ingredients
For the dough:
  • 400g of flour
  • 3tablespoons of oil(+1 extra tablespoon of oil for brushing)
  • 250ml of water(+2 extra tablespoons of water for brushing)
  • 1/2teaspoon of salt
For the filling:
  • 120g of seitan
  • 100g of leek
  • oil for cooking
  • spices of your choice(I used garlic powder, onion powder, salt and pepper)
Other ingredients:
  • 2tablespoons of a mix of different seeds(optional)
Instructions
To prepare the filling:
  1. cut seitan and leek in tiny pieces;
  2. warm up some oil in a frying pan and put seitan and leek pieces in it;
  3. add good amount of different spices of your choice, mix everything well together and cook for 7 – 10 minutes until leek pieces have turned soft.
To prepare the dough:
  1. heat the oven to 200°C/390°F and line a baking tray with parchment paper;
  2. in a big bowl sift the flour together with salt;
  3. in a glass mix together water with oil and then add it to the flour;
  4. mix everything well together until a pizza-type-of-dough is formed. Keep kneading the dough still for a while until it doesn’t stick to your hands anymore.
To prepare the seitan pies with leek:
  1. place the dough on a lightly floured surface and roll it out until it’s thin, but not transparent;
  2. start to make seitan pies by placing a full teaspoon of the prepared filling close to one of the edges of the dough. Then fold the dough over the filling and create a half moon form by using a glass as a cutter. Place the prepared seitan pie on the baking tray and repeat with the rest of the dough;
  3. when all the dough and filling is used, mix in a glass some oil and water and brush the mixture over every seitan pie. If you’re afraid that the seitan pies might open during the baking, prick every seitan pie with a fork. If you’re using seeds, sprinkle them over every seitan pie by lightly pressing them into the dough;
  4. place the baking tray in the middle compartment of a preheated oven and bake the seitan pies for 12 – 15 minutes. The baking time depends on how thin you rolled out the dough. Do not overbake the seitan pies to avoid that they become too dry;
  5. once the seitan pies are golden brown, take them out of the oven. Cut one seitan pie open to be sure that the dough is baked also inside.
