Is it hard to imagine a dessert that contains only 2 ingredients, is good for your health, helps you stay fit and requires less than 10 minutes of work? Before I discovered the “magic powers” of persimmon fruit, I would’ve said that such a dessert doesn’t exist. But not anymore! Now this healthy vegan persimmon pudding is a regular dessert in my house during winter season.
How to prepare the healthy vegan persimmon pudding
The best part of this recipe is that it requires only 2 ingredients – persimmons and cocoa powder. It’s important to use very ripe persimmons, so that the dessert is naturally sweet. Basically, the only thing that you need to do it to blend peeled persimmons with cocoa powder. Once you get a smooth liquid without chunks, just pour it into a jar of your choice. Then cover it with plastic wrap and put in the fridge for at least 2 hours to then discover the superpowers that I mentioned previously – the liquid has become solid! Now just remove it from the jar, decorate it with anything that you like or enjoy it without any extra ingredient.
How to make the healthy vegan persimmon pudding even more delicious
Don’t be afraid to experiment with different flavors! You can add to the liquid mixture dried fruit, nuts, shredded coconut, chocolate chips, berries or other fruit pieces. Basically, whatever you like! Or, if you want to maintain the pudding itself very simple, add these extra ingredients on top of it for some extra flavor, extra crunch or extra juiciness. Don’t get discouraged in case you are not a big fan of the persimmon fruit flavor. I also don’t eat the fruit itself, but I really like the flavor of this healthy vegan persimmon pudding! Just try it out! In any case you will need only 2 ingredients to make this dessert that is:

Instructions
peel the persimmon fruit and cut its flesh in smaller pieces, then put the pieces in a food processor, blend for a few seconds, then add cocoa powder and blend everything until you get a smooth liquid without chunks (approximately 45 seconds);
if some extra ingredients are being used, mix them in the liquid;
pour the liquid in a jar of your choice, cover the jar with plastic wrap and put it in fridge for at least 2 hours;
serve the pudding once its solid – to get it out of the jar, slide a knife around the sides of the pudding and turn the jar upside down over a plate, the pudding will fall out easily

– 200 g of persimmon fruit flesh = I’d say 1 cup, but since usually the persimmon fruits are more or less the same size, just use the whole fruit
