Cucumber might seem like a vegetable that cannot be used in many different ways. I mean, usually everyone uses cucumbers raw. It’s not that you boil or cook them. But even by using them raw, the options might seem limited. For example, the most popular usage of cucumber is to put it in salad. Also using it in sushi rolls is quite common. But what if I told you that you can use the cucumber itself to create rolls, instead of using it only as stuffing? Sounds interesting? Well then let me introduce you to my fresh vegan cucumber rolls.
These fresh vegan cucumber rolls are very easy to make and they can serve as an option for a very quick, yet original starter. The only thing is that you will need to prepare these fresh vegan cucumber rolls right before serving. Otherwise, since cucumber contains a lot of water, with time they could become a bit mushy. So probably the best thing would be to have all the other ingredients ready, except the cucumber slices. And then, right before serving just slice the cucumber and make the rolls!
Fresh vegan cucumber rolls’ ingredients
For these fresh vegan cucumber rolls as stuffing I used my sunflower seed cream cheese recipe. It has a very mild flavor, just like the cucumber, so also the outcome is very simple and delicate. Even though it’s very easy to make the vegan cream cheese from sunflower seeds, if you prefer to use something else for your cucumber rolls, feel free to do that! For example, if you want to spice this recipe up a little bit, add some chili pepper flakes to your vegan cream cheese. Or maybe you already have at home some leftover hummus – you could try to use also that! I have never tried these fresh vegan cucumber rolls with hummus, but I’m sure that the flavor is great. - 1 English cucumber
- 5 tablespoons of sunflower seed cream cheese (check the notes)
- 10 sour berries of your choice (redcurrants, cranberries, lingonberries, pomegranate seeds etc.)
- 2 tablespoons of toasted sesame seeds
Ingredients

- by using a vegetable peeler, slice the cucumber into thin strips, then, in order to remove the extra water, pat them dry with paper towel;
- spread along the length of each slice a thin layer of the sunflower seed cream cheese (approximately ½ tablespoon);
- roll the slice up and do the same with the rest of the slices;
- sprinkle over each cucumber roll toasted sesame seeds and place in the center of the roll the berry of your choice. Serve immediately!

Can the berries be replaced with strawberries?
Hi Ilmu, probably I would not suggest you to use strawberries since they don’t have a particularly strong flavor. It’s better to use something that creates contrast between the flavors 🙂
