In food stores you can quite easily find different kinds of vegan spreads, but usually they contain some unhealthy ingredients. Often vegan cream cheeses contain a lot of salt and/or unnecessary fat. So probably you’ll agree with me that it’s better to make them on your own. And with this recipe of my sunflower seed cream cheese, you can easily do that in a very small amount of time!

This sunflower seed cream cheese is not only easy to make, but it also requires just a few common ingredients. The main ingredient of this recipe is the sunflower seeds that must be previously soaked in water. Even though sunflower seeds are quite rich in fat, the good thing is that they contain the good fats. The ones that instead of damaging our body can actually help it remain healthy. In short – this sunflower seed cream cheese is a great dairy-free alternative to the traditional non-vegan spreads.

In case you like to experiment in kitchen, the good thing is that this sunflower seed cream cheese is easily adaptable to your taste buds. By following step by step this recipe you’ll prepare a vegan spread that has a very mild and simple flavor. If instead you search for something spicier, simply add some red chili flakes. Or maybe you want to give this spread some very specific flavor – then just add to it some extra ingredients of your choice. In any case, I reassure you that also the original recipe is worth a try!

  • 200 g of raw sunflower seeds without shell previously soaked in hot water for 30 minutes
  • 2 tablespoons of lemon juice
  • 100 ml of water (or less)
  • 1/2 teaspoon of salt
  • 4 tablespoons of nutritional yeast flakes
  • 1 clove of garlic
  • 1/2 teaspoon of turmeric powder (optional)
  • 15 g of fresh chives

  • 200 g of raw sunflower seeds without shell previously soaked in hot water for 30 minutes

Instructions
  1. rinse the soaked sunflower seeds and put them in food processor together with lemon juice, salt, nutritional yeast, crushed garlic and, if used, turmeric powder;
  2. add half of the indicated amount of water and blend everything together by stopping occasionally to scrape down the sides of the container. If the mixture is too thick, add gradually one tablespoon of water at a time and continue blending until you reach the desired consistency;
  3. chop the chives and mix them in the cream cheese with a spoon – do not use the food processor for this step!
