Sometimes a slightly unusual mix of flavors can turn into a delicious dish. I think everyone has at least once followed a recipe step-by-step, and then realized that the outcome is nothing special. It happens, and it’s completely ok! By experimenting with food, we can not only understand better our taste, but also by accident discover new finger-licking food combinations. For me a discovery was how good mushrooms go together with the acidity of lemon and the earthy flavor of walnuts. To prepare this recipe as the main ingredient you will need mushrooms, obviously. I used white button mushrooms simply because they are quite easy to find also in regular food stores. In addition to white button mushrooms you’ll need walnuts, lemon juice, oil, chives and lemon pepper. If you have never used lemon pepper before, I really suggest you include it in your shopping list. Lemon pepper is a mix of dried lemon peal and black pepper. It’s a very common spice in my home country, Latvia, while in other countries you’ll probably be able to find it only in specialized shops. But even if so, trust me – it’s worth buying! Lemon pepper is perfect for vegetable dishes, sauces and dips, salads, soups etc.
How to prepare mushrooms with lemon and walnuts
The preparation process is very quick and easy. And because of that this vegan dish is the perfect side dish for every occasion: starting from an easygoing dinner at home in front of a TV and ending with a 5-course dinner menu for your most special guests. Basically, you’ll need to slice the mushrooms, cook them initially in small amount of oil and then add lemon juice, lemon pepper and walnuts. At the end you’ll add chives and cook everything for a few extra minutes until it’s ready. In less than half an hour you’ll have a delicious vegan dish!

When I think about pancakes, usually the first thing that comes in my mind is sweet pancakes with some maple syrup or jam. But who said that pancakes always have to be sweet? They can easily be also savory and equally delicious. Like my savory vegan chickpea flour pancakes that are very easy to make and can be adapted to your taste.
In general, most of the recipes that you find on the internet can be adapted to your wishes and needs. But sometimes, by substituting some ingredients with others, you risk changing completely the outcome of the recipe. Well, that’s not the case with my savory vegan chickpea flour pancakes. The main ingredient, chickpea flour, stays the same. But the other ingredients, meaning the vegetables that I used, can be easily substituted with others. You prefer eggplant instead of zucchini? – Use the eggplant! You don’t like onions? – Don’t add them to your pancake dough! It’s that easy! And the best part is that by changing the vegetables you can make this recipe throughout the year! Simply choose vegetables of the season. In such a way your savory vegan chickpea flour pancakes will be not only rich in flavor, but also sustainable!
How to prepare savory vegan chickpea flour pancakes
To prepare these savory vegan chickpea flour pancakes you’ll need chickpea flour, water, your favorite spices, and your favorite vegetables. In my recipe, I used tomatoes, bell peppers, onions, zucchini, and green beans. But as I mentioned before, the choice of vegetables is completely up to you. The preparation itself is as easy as making regular sweet pancakes, with just a small extra step in the beginning, which is cooking the chosen vegetables. So, start by cutting the vegetables into tiny pieces and cooking them until they’re almost soft. Once the vegetables are ready, let them cool down a bit. Meanwhile prepare the pancake dough by mixing together chickpea flour, water and your chosen spices. After that add the cooked vegetables to the dough and bake the pancakes in a small amount of oil until golden on each side.
Sweet and savory vegan pancake recipes

I stand by the fact that one of the food products that can save a food-related “crisis” is the vegan puff pastry. By being so versatile in its use, it can definitely save you in a moment of unexpected cravings. And it can even help you discover new dishes by accident. But the best part is that you can easily and quickly create from it tasty things that can turn out very useful in case of unexpected guests. And my recipe of vegan pineapple puff pastry is a perfect example of it!
This vegan pineapple puff pastry is also perfect to empty your food pantry. Probably also you have at home a can of pineapple slices that you bought a long time ago for no specific reason. And maybe you also have some leftovers of shredded coconut that you used for other recipes, and now you don’t know where to put the remaining part. Well, by having the aforementioned products, you are almost ready to prepare the vegan pineapple puff pastry!
How to make vegan pineapple puff pastry
The ingredients that you need are vegan puff pastry, canned pineapple slices, shredded coconut, a bit of plant-based milk, agave/maple syrup or sugar and caster sugar. The preparation process is very easy. Place the canned pineapple slices on the puff pastry sheet. Then in a tiny bowl mix together shredded coconut, milk and agave syrup. Spread the prepared mixture over each pineapple slice. Then cover all slices with another puff pastry sheet. Cut out each pineapple slice by leaving a tiny border of puff pastry all around, so that they don’t open in the oven. Cut out the central part of each pastry and make a few small incisions on the top. Bake the pastries in the oven for about 15 minutes. Once ready, let them cool down and then sprinkle over your vegan pineapple puff pastry some caster sugar.

Roasted fennel with almonds

During winter a vegetable that quite often is present in my kitchen is fennel. In Italy it’s a quite popular vegetable and most of the times it’s prepared au gratin. Au gratin or gratinée means a dish that is covered with cheese and/or breadcrumbs. Obviously, in the vegan version there’s no cheese, but even without it you can prepare fennel in a very delicious way. You can make it by using only breadcrumbs, or you can add some extra ingredients like I did with my roasted fennel with almonds.
How to prepare roasted fennel with almonds
As I mentioned before, you can always stick to the simple version by using breadcrumbs, some spices and oil. But if you want to prepare your roasted fennel a bit more differently and make it a bit more flavorful, you should try to add almonds and parsley to it. The preparation process in any case is very simple. Just cut the fennel in slices, in a tiny container mix together chopped almonds, breadcrumbs, spices and chopped parsley. Pour over the fennel some oil, add the dry ingredients and mix everything together. Then transfer everything to a baking tray and cook until ready. It will take about 20 minutes. And that’s it! Your roasted fennel with almonds is ready! This dish tastes great both hot and cold. It’s the perfect side dish for every occasion that tastes wonderful together almost with everything.

Obviously, the typical idea that people have of non-vegan foods that are veganized is that they do not taste like the original. And sometimes it’s true, I’m not going to deny it. But there are foods that have exactly the same flavor also in the vegan version. And these easy vegan Snickers bites taste exactly like the real Snickers bar. The only difference is that they are healthier and cruelty-free!
How to prepare the easy vegan Snickers bites
The recipe of my easy vegan Snickers bites is not something new. Online you can find many variations of it. Often people tend to add some, in my opinion, unnecessary ingredients, like salt grains, coconut oil etc. While some other recipes ask for minimal use of chocolate. Well, I disagree with these ideas. For me this recipe works best by using only 4 ingredients: dates, peanuts, peanut butter and good amount of chocolate.
The preparation process is very easy: pit the dates, fill them with peanut butter and some peanuts, then cover with dark chocolate. Afterwards put your creations in fridge ad that’s it! In 30 minutes your easy vegan Snickers bites will be ready. I must admit that the first time I made these vegan Snickers bites I was quite skeptical, but they really do taste like the real thing! In case you love easy vegan sweets, I suggest you to try my fruit filled vegan chocolate candies. The preparation process is similar to the one of these easy vegan Snickers bites, but the outcome is very juicy and refreshing. But if you’re more into the famous chocolate bars, then you should definitely try my vegan Bounty bars. Also for the Bounty bars you’ll need only 4 ingredients!

Cucumber might seem like a vegetable that cannot be used in many different ways. I mean, usually everyone uses cucumbers raw. It’s not that you boil or cook them. But even by using them raw, the options might seem limited. For example, the most popular usage of cucumber is to put it in salad. Also using it in sushi rolls is quite common. But what if I told you that you can use the cucumber itself to create rolls, instead of using it only as stuffing? Sounds interesting? Well then let me introduce you to my fresh vegan cucumber rolls.
These fresh vegan cucumber rolls are very easy to make and they can serve as an option for a very quick, yet original starter. The only thing is that you will need to prepare these fresh vegan cucumber rolls right before serving. Otherwise, since cucumber contains a lot of water, with time they could become a bit mushy. So probably the best thing would be to have all the other ingredients ready, except the cucumber slices. And then, right before serving just slice the cucumber and make the rolls!
Fresh vegan cucumber rolls’ ingredients
For these fresh vegan cucumber rolls as stuffing I used my sunflower seed cream cheese recipe. It has a very mild flavor, just like the cucumber, so also the outcome is very simple and delicate. Even though it’s very easy to make the vegan cream cheese from sunflower seeds, if you prefer to use something else for your cucumber rolls, feel free to do that! For example, if you want to spice this recipe up a little bit, add some chili pepper flakes to your vegan cream cheese. Or maybe you already have at home some leftover hummus – you could try to use also that! I have never tried these fresh vegan cucumber rolls with hummus, but I’m sure that the flavor is great. The main ingredient of this recipe is the sunflower seeds that must be previously soaked in water. Even though sunflower seeds are quite rich in fat, the good thing is that they contain the good fats. The ones that instead of damaging our body can actually help it remain healthy. It’s completely normal if from time to time you miss some specific flavors of animal-based foods. Because obviously turning to veganism doesn’t mean that suddenly you start to hate the flavors that you previously loved. For me the flavor that I tend to miss from time to time is the egg flavor. And fortunately, in such cases there is a delicious remedy for this craving – my easy vegan tofu scramble.
Even though eggs are mostly associated with breakfast, I must say that you can easily enjoy this easy vegan tofu scramble also for lunch or dinner. It’s rich in plant-based protein and very easy and quick to make. You just need to cook onions and cherry tomatoes, crumble the tofu into tiny pieces and then prepare the “sauce” that will be mixed in the tofu and vegetables.
The flavorful secret of the easy vegan tofu scramble
To make your tofu look like scrambled eggs is very easy. Just break it into bigger and smaller chunks and change its white color into yellow by using turmeric powder. However, making it also taste like eggs can be a bit trickier! Basically, the thing that does the magic is the kala namak, also known as the black salt. Maybe you have heard of it – it’s that smelly salt that smells like eggs. Not the most pleasant aroma, I must admit, ha ha! Anyway, for this easy vegan tofu scramble it’s perfect because it gives the right amount of egg-y aroma and flavor to the dish! You can usually buy this salt in all the specialized food stores or online. But in case you cannot find it, don’t worry. Also without kala namak this easy vegan tofu scramble is delicious!
If you are a fan of savory breakfast, you definitely have to try this tofu scramble recipe! Or, if it seems too difficult, go for something simpler yet super healthy and delicious – my avocado toasts with fresh radishes. Healthy vegan persimmon pudding

Is it hard to imagine a dessert that contains only 2 ingredients, is good for your health, helps you stay fit and requires less than 10 minutes of work? Before I discovered the “magic powers” of persimmon fruit, I would’ve said that such a dessert doesn’t exist. But not anymore! Now this healthy vegan persimmon pudding is a regular dessert in my house during winter season.
How to prepare the healthy vegan persimmon pudding
The best part of this recipe is that it requires only 2 ingredients – persimmons and cocoa powder. It’s important to use very ripe persimmons, so that the dessert is naturally sweet. Basically, the only thing that you need to do it to blend peeled persimmons with cocoa powder. Once you get a smooth liquid without chunks, just pour it into a jar of your choice. Then cover it with plastic wrap and put in the fridge for at least 2 hours to then discover the superpowers that I mentioned previously – the liquid has become solid! Now just remove it from the jar, decorate it with anything that you like or enjoy it without any extra ingredient.
How to make the healthy vegan persimmon pudding even more delicious
Don’t be afraid to experiment with different flavors! You can add to the liquid mixture dried fruit, nuts, shredded coconut, chocolate chips, berries or other fruit pieces. Basically, whatever you like! Or, if you want to maintain the pudding itself very simple, add these extra ingredients on top of it for some extra flavor, extra crunch or extra juiciness.
